Ingredients

- 1 head green cabbage, chopped
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 can diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon Italian seasoning
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, sauté onion, carrots, celery, and garlic until softened.
- Add chopped cabbage and cook for a few minutes.
- Stir in diced tomatoes, vegetable broth, and Italian seasoning.
- Bring to a boil, then reduce heat and simmer for about 30 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
