Comforting and hearty, this Slow Cooker Chicken and Dumplings recipe is perfect for a cozy dinner.


Ingredients

  • 4 cups chicken broth
  • 1 pound boneless, skinless chicken thighs
  • 2 cups frozen mixed vegetables
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 can refrigerated biscuit dough

Instructions

  1. In a slow cooker, combine chicken broth, chicken thighs, mixed vegetables, thyme, onion powder, garlic powder, and black pepper.
  2. Cover and cook on low for 6-8 hours or until chicken is cooked through.
  3. Remove chicken, shred it, and return it to the slow cooker.
  4. Cut the biscuit dough into quarters and add to the slow cooker.
  5. Cover and cook for another 30 minutes until biscuits are cooked through.

Notes

  • Serve with a sprinkle of parsley for garnish.
  • For a thicker broth, mix cornstarch with water and add in before serving.
