A refreshing shrimp ceviche made with fresh ingredients.
Ingredients

- 1 pound shrimp, peeled and deveined
- 1 cup lime juice
- 1/2 cup red onion, diced
- 1 cup tomatoes, diced
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1 jalapeño, minced
- 1/2 teaspoon salt
Instructions
- In a large bowl, combine shrimp and lime juice; marinate for 15-20 minutes.
- Once the shrimp is opaque, drain excess lime juice.
- Add onion, tomatoes, avocado, cilantro, jalapeño, and salt; mix well.
- Chill for 30 minutes before serving.
Notes
- Serve with tortilla chips for added crunch.
- Adjust lime juice amount to taste.
- Best enjoyed fresh but can be stored in the fridge for up to 2 days.
