Description

A refreshing shrimp ceviche made with fresh ingredients.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup lime juice
  • 1/2 cup red onion, diced
  • 1 cup tomatoes, diced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, minced
  • 1/2 teaspoon salt

Instructions

  1. In a large bowl, combine shrimp and lime juice; marinate for 15-20 minutes.
  2. Once the shrimp is opaque, drain excess lime juice.
  3. Add onion, tomatoes, avocado, cilantro, jalapeño, and salt; mix well.
  4. Chill for 30 minutes before serving.

Notes

  • Serve with tortilla chips for added crunch.
  • Adjust lime juice amount to taste.
  • Best enjoyed fresh but can be stored in the fridge for up to 2 days.
