Description

Deliciously soft and spiced pumpkin whoopie pies filled with creamy frosting.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt
  • 1 cup cream cheese, softened
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, vegetable oil, granulated sugar, and brown sugar until smooth.
  3. Add eggs, mixing well.
  4. In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  5. Gradually mix dry ingredients into the pumpkin mixture until well combined.
  6. Drop by rounded tablespoons onto a lined baking sheet.
  7. Bake for 10-12 minutes, or until the edges are firm.
  8. Let cool completely.
  9. For the filling, beat cream cheese and butter until creamy, then add powdered sugar and vanilla.
  10. Spread filling on the flat side of one cookie and sandwich with another.
