Description

Delicious mini quiches filled with spinach and feta cheese, perfect for a quick snack or appetizer.


Ingredients

  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the spinach until wilted.
  3. In a bowl, whisk together eggs, milk, salt, pepper, and nutmeg.
  4. Stir in sautéed spinach and feta cheese.
  5. Grease a muffin tin and pour the mixture into each cup.
  6. Bake for 20-25 minutes or until the quiches are set and lightly golden.
  7. Let cool slightly before removing from the tin.
  8. Serve warm or at room temperature.
