Ingredients

- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 4 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the spinach until wilted.
- In a bowl, whisk together eggs, milk, salt, pepper, and nutmeg.
- Stir in sautéed spinach and feta cheese.
- Grease a muffin tin and pour the mixture into each cup.
- Bake for 20-25 minutes or until the quiches are set and lightly golden.
- Let cool slightly before removing from the tin.
- Serve warm or at room temperature.
Notes
- These quiches can be customized with your favorite vegetables or cheeses.
