Description

This KETO Vegetable Quiche is a delicious and healthy option packed with spinach and sweet potatoes.


Ingredients

  • 1 medium sweet potato, peeled and diced
  • 2 cups fresh spinach
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the diced sweet potato until tender.
  3. Add the spinach and cook until wilted.
  4. In a bowl, whisk together eggs, heavy cream, salt, pepper, and nutmeg.
  5. Add the sautéed vegetables and cheese to the egg mixture and stir to combine.
  6. Pour the mixture into a greased pie dish.
  7. Bake for 35-40 minutes or until set in the center.
  8. Let cool for a few minutes before slicing and serving.
