This KETO Vegetable Quiche is a delicious and healthy option packed with spinach and sweet potatoes.

- 1 medium sweet potato, peeled and diced
- 2 cups fresh spinach
- 4 large eggs
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, sauté the diced sweet potato until tender.
- Add the spinach and cook until wilted.
- In a bowl, whisk together eggs, heavy cream, salt, pepper, and nutmeg.
- Add the sautéed vegetables and cheese to the egg mixture and stir to combine.
- Pour the mixture into a greased pie dish.
- Bake for 35-40 minutes or until set in the center.
- Let cool for a few minutes before slicing and serving.
Notes
- For a variation, add other low-carb vegetables.
- Store leftovers in the refrigerator for up to 3 days.
