- 3 pounds flank steak
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 onion, sliced
- 1 bell pepper, sliced
- 4 cloves garlic, minced
- 1 can diced tomatoes
- 1 tablespoon vinegar
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Season the flank steak with salt, pepper, cumin, and oregano.
- Brown the steak on all sides in the skillet.
- Transfer the steak to the slow cooker.
- Add sliced onions, bell peppers, garlic, diced tomatoes, and vinegar.
- Cover and cook on low for 8 hours.
- Shred the beef with two forks before serving.
