Ingredients

  • 3 pounds flank steak
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tablespoon vinegar

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the flank steak with salt, pepper, cumin, and oregano.
  3. Brown the steak on all sides in the skillet.
  4. Transfer the steak to the slow cooker.
  5. Add sliced onions, bell peppers, garlic, diced tomatoes, and vinegar.
  6. Cover and cook on low for 8 hours.
  7. Shred the beef with two forks before serving.
