- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach, chopped
- 1 cup tortellini (zucchini or keto-friendly)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the Italian sausage over medium heat.
- Add the onion and garlic; sauté until translucent.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream and add the spinach.
- Add the tortellini and Italian seasoning; cook until the tortellini is tender.
- Season with salt and pepper before serving.
Notes
- This soup can be made ahead of time and reheated.
- Use zucchini or another low-carb tortellini substitute to keep it keto-friendly.
