A comforting and hearty soup featuring keto-friendly tortellini and savory sausage.


Ingredients

Scale
  • 1 pound ground sausage
  • 1 medium butternut squash, peeled and cubed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup spinach, chopped
  • 2 cups keto tortellini

Instructions

  1. In a large pot, brown the sausage over medium heat until fully cooked.
  2. Add the butternut squash and chicken broth. Bring to a boil.
  3. Reduce heat and simmer for 15-20 minutes, or until squash is tender.
  4. Stir in heavy cream, garlic powder, Italian seasoning, salt, and pepper.
  5. Add the spinach and tortellini. Cook until tortellini is tender.
