- 1 cup chopped celery
- 1/2 cup crushed unsalted pistachios
- 1 cup mini marshmallows (sugar-free, if desired)
- 1/2 cup Greek yogurt
Instructions
- In a mixing bowl, whip the heavy cream until soft peaks form.
- In another bowl, combine the pistachio pudding mix and Greek yogurt until smooth.
- Fold the whipped cream into the pudding mixture gently.
- Add the chopped celery, crushed pistachios, and mini marshmallows, stirring to combine.
- Chill in the refrigerator for at least 1 hour before serving.
