A low-carb variation of the classic Italian dish made with zoodles and rich tomato sauce.
Ingredients

- 4 medium zucchinis
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Spiralize the zucchinis to create zoodles.
- In a large skillet, sauté the minced garlic until fragrant.
- Add the marinara sauce, oregano, salt, and pepper. Let simmer for 5 minutes.
- Mix the zoodles into the sauce and cook until just tender, about 3-5 minutes.
- Transfer to a baking dish and top with mozzarella and Parmesan cheese.
- Bake in a preheated oven at 375°F (190°C) for 15-20 minutes until cheese is bubbly.
Notes
- For extra flavor, add fresh basil before serving.
- Adjust the amount of sauce based on personal preference.
