Description

Ingredients

  • 2 medium zucchinis
  • 1 pound ground beef
  • 1 cup shredded cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice the zucchinis and set aside.
  3. In a skillet, brown the ground beef over medium heat, adding diced onion and minced garlic until the onion is translucent.
  4. Add the diced tomatoes and seasonings to the beef mixture, stirring well.
  5. In a casserole dish, layer the zucchini slices and beef mixture alternately.
  6. Top with shredded cheese.
  7. Bake for 25–30 minutes until the zucchini is tender and the cheese is bubbly.
