- 2 medium zucchinis
- 1 pound ground beef
- 1 cup shredded cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Slice the zucchinis and set aside.
- In a skillet, brown the ground beef over medium heat, adding diced onion and minced garlic until the onion is translucent.
- Add the diced tomatoes and seasonings to the beef mixture, stirring well.
- In a casserole dish, layer the zucchini slices and beef mixture alternately.
- Top with shredded cheese.
- Bake for 25–30 minutes until the zucchini is tender and the cheese is bubbly.
Notes
- For added flavor, consider adding sliced bell peppers or mushrooms.
- Ensure the zucchini is not too watery; you can salt the slices and let them sit to draw out moisture.
