Ingredients

  • 1 pound boneless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 cups spinach

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion, garlic, carrots, and celery; sauté until tender.
  3. Stir in thyme, rosemary, salt, and pepper.
  4. Add the chicken breasts and chicken broth; bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes, or until chicken is cooked through.
  6. Remove chicken, shred it, and return to the pot.
  7. Stir in heavy cream and spinach; cook until spinach is wilted.
  8. Serve hot and enjoy!
