- 1 tablespoon olive oil
- 1 pound ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 can (15 ounces) crushed tomatoes
- 4 cups chicken broth
- 2 cups zucchini, diced
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add ground beef and cook until browned.
- Stir in garlic powder, onion powder, and Italian seasoning.
- Add crushed tomatoes and chicken broth, and bring to a boil.
- Mix in zucchini and simmer for 10 minutes.
- Serve soup in bowls and top with ricotta, mozzarella, and Parmesan.
- Season with salt and pepper to taste.

- For extra flavor, add fresh basil before serving.
