Description

A low-carb twist on traditional lasagna, this Keto Lasagna Soup is hearty, delicious, and perfect for meal prep.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 can (15 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 cups zucchini, diced
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add ground beef and cook until browned.
  3. Stir in garlic powder, onion powder, and Italian seasoning.
  4. Add crushed tomatoes and chicken broth, and bring to a boil.
  5. Mix in zucchini and simmer for 10 minutes.
  6. Serve soup in bowls and top with ricotta, mozzarella, and Parmesan.
  7. Season with salt and pepper to taste.
