Description

A delicious low-carb chicken recipe cooked in an Instant Pot with peanut butter and cinnamon for a unique flavor.


Ingredients

  • 2 pounds chicken thighs
  • 1/2 cup creamy peanut butter
  • 1 teaspoon ground cinnamon
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix peanut butter, soy sauce, cinnamon, garlic, ginger, and lime juice until smooth.
  2. Season the chicken thighs with salt and pepper.
  3. Heat the olive oil in the Instant Pot on sauté mode and brown the thighs on both sides.
  4. Add the chicken broth and peanut butter mixture to the pot.
  5. Seal the pot and cook on high pressure for 15 minutes.
  6. Let the pressure release naturally for 10 minutes, then perform a quick release for any remaining pressure.
  7. Serve the chicken with sauce poured over the top.
