- 2 pounds chicken thighs
- 1/2 cup creamy peanut butter
- 1 teaspoon ground cinnamon
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a bowl, mix peanut butter, soy sauce, cinnamon, garlic, ginger, and lime juice until smooth.
- Season the chicken thighs with salt and pepper.
- Heat the olive oil in the Instant Pot on sauté mode and brown the thighs on both sides.
- Add the chicken broth and peanut butter mixture to the pot.
- Seal the pot and cook on high pressure for 15 minutes.
- Let the pressure release naturally for 10 minutes, then perform a quick release for any remaining pressure.
- Serve the chicken with sauce poured over the top.
