Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup Guinness stout
- 2 cups carrots, sliced
- 2 cups celery, sliced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons tomato paste
Instructions
- In a Dutch oven or slow cooker, heat olive oil over medium-high heat. Add the beef and brown on all sides.
- Remove the beef and set aside. Add onions and garlic to the pot, sauté until softened.
- Return the beef to the pot. Stir in beef broth, Guinness, carrots, celery, thyme, salt, black pepper, and tomato paste.
- If using a Dutch oven, bring to a simmer, cover, and cook at 325°F for 2.5 to 3 hours. If using a slow cooker, cook on low for 6-8 hours.
- Once the beef is tender, adjust seasoning to taste and serve hot.
Notes
- For extra flavor, add fresh herbs like rosemary or parsley before serving.
- This stew can be stored in the refrigerator for up to 3 days or frozen for later use.
