Description

A hearty and flavorful stew perfect for cold evenings, made with tender beef and rich Guinness stout.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup Guinness stout
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons tomato paste

Instructions

  1. In a Dutch oven or slow cooker, heat olive oil over medium-high heat. Add the beef and brown on all sides.
  2. Remove the beef and set aside. Add onions and garlic to the pot, sauté until softened.
  3. Return the beef to the pot. Stir in beef broth, Guinness, carrots, celery, thyme, salt, black pepper, and tomato paste.
  4. If using a Dutch oven, bring to a simmer, cover, and cook at 325°F for 2.5 to 3 hours. If using a slow cooker, cook on low for 6-8 hours.
  5. Once the beef is tender, adjust seasoning to taste and serve hot.

  • For extra flavor, add fresh herbs like rosemary or parsley before serving.
