Ingredients

  • 4 tablespoons unsalted butter
  • 4 cups thinly sliced yellow onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 8 cups beef broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup grated Gruyere cheese
  • 1 cup grated Parmesan cheese

Instructions

  1. In a large Dutch oven, melt the butter over medium heat.
  2. Add the sliced onions and salt, and cook until the onions are caramelized, about 20-25 minutes.
  3. Stir in the garlic and cook for another minute.
  4. Add the beef broth, thyme, and bay leaf. Bring to a simmer.
  5. Let it cook for 15-20 minutes to let the flavors meld.
  6. Remove the bay leaf, and ladle the soup into oven-safe bowls.
  7. Top each bowl with a mix of Gruyere and Parmesan cheese.
  8. Place under the broiler until the cheese is bubbly and golden.
