- 4 cups thinly sliced yellow onions
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 8 cups beef broth
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 cup grated Gruyere cheese
- 1 cup grated Parmesan cheese
Instructions
- In a large Dutch oven, melt the butter over medium heat.
- Add the sliced onions and salt, and cook until the onions are caramelized, about 20-25 minutes.
- Stir in the garlic and cook for another minute.
- Add the beef broth, thyme, and bay leaf. Bring to a simmer.
- Let it cook for 15-20 minutes to let the flavors meld.
- Remove the bay leaf, and ladle the soup into oven-safe bowls.
- Top each bowl with a mix of Gruyere and Parmesan cheese.
- Place under the broiler until the cheese is bubbly and golden.
