Description

This creamy and delicious keto-friendly potato soup is perfect for a comforting meal.


Ingredients

Scale
  • 1 pound cauliflower, riced
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, combine riced cauliflower and chicken broth. Bring to a boil.
  2. Reduce heat and simmer until cauliflower is tender.
  3. Add heavy cream, cheddar cheese, garlic powder, onion powder, salt, and pepper.
  4. Use an immersion blender to puree the soup until smooth.
  5. Heat through and serve hot.

  • For added flavor, sauté onions and garlic before adding broth.
