- 1 pound cauliflower, riced
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, combine riced cauliflower and chicken broth. Bring to a boil.
- Reduce heat and simmer until cauliflower is tender.
- Add heavy cream, cheddar cheese, garlic powder, onion powder, salt, and pepper.
- Use an immersion blender to puree the soup until smooth.
- Heat through and serve hot.

- For added flavor, sauté onions and garlic before adding broth.
