Description

This soothing and delicious soup is perfect for cold and flu season, packed with nutritious ingredients to help fight off illness.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 4 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1/2 cup couscous
  • 1 cup spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, garlic, carrots, and celery. Sauté until vegetables are tender.
  3. Stir in thyme and cook for another minute.
  4. Add chicken broth and bring to a boil.
  5. Reduce heat and add shredded chicken and couscous. Simmer for about 5 minutes or until couscous is tender.
  6. Stir in spinach and season with salt and pepper. Serve hot.
