- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 4 cups chicken broth
- 1 cup cooked chicken, shredded
- 1/2 cup couscous
- 1 cup spinach, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onions, garlic, carrots, and celery. Sauté until vegetables are tender.
- Stir in thyme and cook for another minute.
- Add chicken broth and bring to a boil.
- Reduce heat and add shredded chicken and couscous. Simmer for about 5 minutes or until couscous is tender.
- Stir in spinach and season with salt and pepper. Serve hot.

- This soup can be made in advance and stored in the refrigerator for up to 3 days.
