- 1 ½ cups almond flour
- ½ cup sweetener (erythritol or similar)
- ½ cup butter, melted
- 2 large eggs
- 8 oz cream cheese, softened
- 1 tsp vanilla extract
- 1 tbsp cinnamon
- ½ cup sour cream
- 1 tsp baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, sweetener, and melted butter.
- Press the mixture into a greased springform pan.
- In a separate bowl, beat cream cheese until smooth.
- Add in eggs, vanilla extract, and sour cream; mix until combined.
- Pour the cream cheese mixture over the crust.
- In a small bowl, combine cinnamon and additional sweetener; sprinkle over the cheesecake.
- Bake for 30-35 minutes or until set. Let cool before serving.
Notes
- For extra flavor, serve with a drizzle of sugar-free chocolate sauce.
- Store leftovers in the refrigerator for up to 5 days.
