- 1/4 cup erythritol
- 1/4 cup unsalted butter, melted
- 1/4 teaspoon salt
- 3 large eggs
- 2 cups heavy cream
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 cup additional erythritol for sweetening custard
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, erythritol, melted butter, and salt to form a crust.
- Press the mixture into a pie pan and pre-bake for 10 minutes.
- In another bowl, whisk together the eggs, heavy cream, vanilla extract, ground cinnamon, and additional erythritol.
- Pour the custard mixture into the baked crust.
- Bake for an additional 30-35 minutes until the custard is set.
- Allow to cool before serving. Optionally, sprinkle with additional cinnamon.
