Ingredients

  • 1/4 cup erythritol
  • 1/4 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 3 large eggs
  • 2 cups heavy cream
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup additional erythritol for sweetening custard

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, erythritol, melted butter, and salt to form a crust.
  3. Press the mixture into a pie pan and pre-bake for 10 minutes.
  4. In another bowl, whisk together the eggs, heavy cream, vanilla extract, ground cinnamon, and additional erythritol.
  5. Pour the custard mixture into the baked crust.
  6. Bake for an additional 30-35 minutes until the custard is set.
  7. Allow to cool before serving. Optionally, sprinkle with additional cinnamon.
