Description

A hearty and healthy soup perfect for a keto diet, made with nutritious carrots and lentils.


Ingredients

Scale
  • 2 cups diced carrots
  • 1 cup lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • salt to taste
  • pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onions and garlic, sauté until onions are translucent.
  3. Add carrots and lentils, stirring for a few minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Season with cumin, paprika, salt, and pepper.
  6. Reduce heat and simmer for 30-40 minutes until lentils are tender.
  7. Blend the soup to your desired consistency and serve hot.
