- 2 cups diced carrots
- 1 cup lentils
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- salt to taste
- pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onions and garlic, sauté until onions are translucent.
- Add carrots and lentils, stirring for a few minutes.
- Pour in the vegetable broth and bring to a boil.
- Season with cumin, paprika, salt, and pepper.
- Reduce heat and simmer for 30-40 minutes until lentils are tender.
- Blend the soup to your desired consistency and serve hot.
