Ingredients

- 4 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 2 cups chicken broth
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Add the broccoli florets and sauté for another 3-4 minutes.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer until broccoli is tender.
- Using an immersion blender, blend the soup until smooth.
- Add the heavy cream and shredded cheddar cheese, stirring until the cheese has melted and the soup is creamy.
- Season with salt and pepper to taste, then serve immediately.
Notes
- For a richer flavor, use homemade chicken stock.
- Add more cheese for a thicker soup.
