Description

A creamy, cheesy, and healthy broccoli cheddar soup perfect for those following a keto diet.


Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the broccoli florets and sauté for another 3-4 minutes.
  4. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until broccoli is tender.
  5. Using an immersion blender, blend the soup until smooth.
  6. Add the heavy cream and shredded cheddar cheese, stirring until the cheese has melted and the soup is creamy.
  7. Season with salt and pepper to taste, then serve immediately.

Notes

  • For a richer flavor, use homemade chicken stock.
