- 1 cup mixed nuts (almonds, walnuts, pecans)
- 1 cup dried fruit (raisins, cranberries, apricots)
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the barley flakes, mixed nuts, dried fruit, salt, and cinnamon.
- In a small saucepan, heat the honey (or maple syrup) and coconut oil over low heat until melted.
- Stir in the vanilla extract and pour the mixture over the dry ingredients, mixing well to combine.
- Spread the granola mixture evenly onto a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, stirring halfway through, until golden and fragrant.
- Allow to cool completely before breaking into clusters and storing in an airtight container.
