Ingredients

- 1 cup cooked barley
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 2 large eggs
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 whole wheat tortillas
Instructions
- In a skillet, heat olive oil over medium heat. Add spinach and cook until wilted.
- In a bowl, whisk eggs with salt and pepper.
- Add cooked barley and feta to the skillet, then pour in the egg mixture.
- Stir until eggs are fully cooked.
- Warm tortillas in a separate pan.
- Spoon the mixture onto each tortilla, roll up, and serve.
