Ingredients

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 2 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, whisk together the milk, sugar, cocoa powder, and salt over medium heat.
  2. In a separate bowl, whisk the egg yolks until smooth.
  3. Once the milk mixture is hot but not boiling, slowly whisk a small amount into the egg yolks to temper them.
  4. Gradually add the egg mixture back into the saucepan, whisking constantly.
  5. Cook the mixture, whisking continuously, until it thickens and bubbles.
  6. Remove from heat, then stir in the butter and vanilla extract.
  7. Pour the pudding into individual serving dishes and let cool.
  8. Chill in the refrigerator for at least 2 hours before serving.
