Deliciously fudgy brownies made with cottage cheese, perfect for a low carb keto diet.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup erythritol or sweetener of choice
  • 1/4 cup melted coconut oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine cottage cheese, eggs, and melted coconut oil.
  3. Add erythritol, vanilla extract, cocoa powder, almond flour, baking powder, and salt. Mix until smooth.
  4. Pour the batter into the prepared baking dish.
