Description

A deliciously creamy sausage tortellini soup packed with flavor and perfect for a cozy meal.


Ingredients

  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cups fresh spinach
  • 1 package (9 oz) cheese tortellini
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned.
  2. Add onion and garlic, cooking until the onion is translucent.
  3. Pour in chicken broth and diced tomatoes. Stir in basil and oregano.
  4. Bring to a simmer and add tortellini. Cook as per package instructions.
  5. Stir in spinach and heavy cream. Heat through.
  6. Serve hot, garnished with Parmesan cheese.

Notes

  • This soup can be made ahead of time and stored in the fridge for up to 3 days.
  • For a lighter version, substitute heavy cream with half-and-half.
