Ingredients

- 2 cups cooked chicken, shredded
- 1 cup cottage cheese
- 1/2 cup celery, diced
- 1/4 cup green onions, sliced
- 1/4 cup red bell pepper, diced
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh dill, chopped (optional)
Instructions
- In a large bowl, combine the shredded chicken, cottage cheese, celery, green onions, and red bell pepper.
- Add the lemon juice, salt, black pepper, and dill (if using).
- Mix everything together until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve on a bed of lettuce or as a filling in sandwiches.
Notes
- This salad can be made a day in advance and stored in the refrigerator.
- Adjust the seasoning to taste, adding more salt or pepper if desired.
