Ingredients

- 1 pound chicken breast, diced
- 1 cup barley
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 2 stalks celery, sliced
- 4 cups chicken broth
- 2 cups water
- 1 teaspoon thyme
- 1 bay leaf
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, combine chicken, barley, onion, garlic, carrots, and celery.
- Add chicken broth, water, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 1 hour, or until barley is tender.
- Remove bay leaf and adjust seasoning if necessary before serving.
Notes
- For a richer flavor, you can sauté the onion, garlic, carrots, and celery in olive oil before adding the other ingredients.
- Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
