Description

A hearty and healthy chicken barley soup that is perfect for any season.


Ingredients

  • 1 pound chicken breast, diced
  • 1 cup barley
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 4 cups chicken broth
  • 2 cups water
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, combine chicken, barley, onion, garlic, carrots, and celery.
  2. Add chicken broth, water, thyme, bay leaf, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for about 1 hour, or until barley is tender.
  4. Remove bay leaf and adjust seasoning if necessary before serving.

Notes

  • For a richer flavor, you can sauté the onion, garlic, carrots, and celery in olive oil before adding the other ingredients.
