Description

A comforting and hearty soup made with chicken, wild rice, and vegetables, perfect for chilly days.


Ingredients

  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup wild rice, rinsed
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Add garlic and cook for another minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add wild rice and reduce heat to low. Simmer covered for 45 minutes.
  6. Stir in cooked chicken, thyme, salt, and pepper.
  7. After 10 minutes, pour in heavy cream and stir to combine.
  8. Adjust seasoning as needed and serve hot.

Notes

  • For extra flavor, add fresh herbs.
