Ingredients

- 1 tablespoon olive oil
- 1 cup onion, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 2 cloves garlic, minced
- 8 cups chicken broth
- 1 cup wild rice, rinsed
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
- Add garlic and cook for another minute.
- Pour in chicken broth and bring to a boil.
- Add wild rice and reduce heat to low. Simmer covered for 45 minutes.
- Stir in cooked chicken, thyme, salt, and pepper.
- After 10 minutes, pour in heavy cream and stir to combine.
- Adjust seasoning as needed and serve hot.
Notes
- For extra flavor, add fresh herbs.
- This soup can be frozen for up to 3 months.
