This Chicken and Sweet Potato Meal Prep is a healthy and delicious option for busy weeks, packed with protein and nutrients.


Ingredients

Scale
  • 2 pounds chicken breast, diced
  • 4 medium sweet potatoes, cubed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups broccoli florets
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine chicken, sweet potatoes, olive oil, garlic powder, paprika, salt, and pepper. Mix well.
  3. Spread the mixture on a baking sheet in a single layer.
  4. Bake for 25-30 minutes or until the chicken is cooked through and sweet potatoes are tender.
  5. In the last 10 minutes of baking, add broccoli florets to the baking sheet.
  6. Remove from oven, garnish with parsley, and let cool before portioning.
