Ingredients

- 2 tablespoons olive oil
- 1 pound cooked chicken, shredded
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can diced green chiles
- 1 cup heavy cream
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (optional)
Instructions
- In a large pot, heat olive oil over medium heat and sauté the onion until translucent.
- Add garlic and cook for another minute.
- Stir in the shredded chicken, chicken broth, green chiles, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in the heavy cream and cook for an additional 5 minutes.
- If using, add the shredded cheese just before serving.

- This chili can be stored in the fridge for up to 4 days.
- For extra flavor, add toppings such as avocado, cilantro, or additional cheese.
