A delicious and creamy Keto White Chicken Chili that’s perfect for a cozy dinner or meal prep!


Ingredients

  • 2 tablespoons olive oil
  • 1 pound cooked chicken, shredded
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can diced green chiles
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the onion until translucent.
  2. Add garlic and cook for another minute.
  3. Stir in the shredded chicken, chicken broth, green chiles, cumin, chili powder, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in the heavy cream and cook for an additional 5 minutes.
  6. If using, add the shredded cheese just before serving.
