Description

Ingredients

- 2 slices whole grain bread
- 1 ripe avocado
- 1 egg
- 1 tablespoon lemon juice
- salt to taste
- pepper to taste
- optional red pepper flakes
Instructions
- Toast the slices of bread until golden brown.
- While the bread is toasting, bring a pot of water to a simmer.
- Add a splash of vinegar to the water.
- Crack the egg into a small bowl.
- When the water is simmering, gently slide the egg into the water.
- Poach the egg for 3-4 minutes or until the desired doneness.
- Meanwhile, mash the avocado in a bowl with lemon juice, salt, and pepper.
- Spread the mashed avocado on the toasted bread.
- Remove the egg from the water and place it on top of the avocado toast.
- Sprinkle with red pepper flakes, if desired.
Notes
- For easier poaching, use fresh eggs.
- Customize toppings as desired, such as tomatoes or radishes.
- Serve immediately for the best flavor and texture.
