- 1 pound ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 cup breadcrumbs
- 1 egg
- 2 tablespoons taco seasoning
- 1 cup salsa
- 1 cup shredded cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine ground beef, onion, bell pepper, breadcrumbs, egg, taco seasoning, and half of the salsa.
- Mix well and shape into a loaf. Place in a baking dish.
- Top with remaining salsa and shredded cheese.
- Bake for 1 hour or until cooked through.
Notes
- Let the meatloaf rest for 10 minutes before slicing.
- Serve with additional salsa on the side.
