Ingredients

  • 1 pound boneless chicken breasts, cubed
  • 1 cup pineapple chunks
  • 1 cup bell peppers, chopped
  • 1 cup green onions, sliced
  • 1/2 cup sugar
  • 1/4 cup vinegar
  • 1/4 cup soy sauce
  • 1 tablespoon ketchup
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons vegetable oil

Instructions

  1. In a large skillet, heat vegetable oil over medium heat.
  2. Add chicken cubes and cook until golden brown.
  3. Add bell peppers and onions, cook until tender.
  4. Stir in pineapple chunks.
  5. In a bowl, mix sugar, vinegar, soy sauce, ketchup, cornstarch, and water.
  6. Pour the sauce over the chicken and vegetables.
  7. Cook until the sauce thickens and coats the chicken and vegetables.
  8. Serve hot over rice.
