- 1/2 pound shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1/2 cup peas and carrots
- 3 tablespoons soy sauce
- 2 green onions, chopped
- 1 teaspoon sesame oil
Instructions
- Heat oil in a large skillet over medium heat.
- Add shrimp and cook until pink, about 3 minutes.
- Push shrimp to one side and scramble the eggs on the other side.
- Add cooked rice, peas, carrots, and soy sauce.
- Stir to combine and heat through.
- Finish with sesame oil and green onions before serving.
