- 1 cup diced tomatoes

- 1/2 teaspoon cayenne pepper
- 1 tablespoon chopped parsley
Instructions
- Peel and cube the potatoes.
- Heat olive oil in a large pan over medium heat.
- Add potatoes and cook until golden brown and crispy.
- In a separate saucepan, combine tomatoes, vinegar, paprika, cayenne, salt, and pepper to make the sauce.
- Simmer sauce for about 10 minutes.
- Serve potatoes hot with sauce drizzled on top and sprinkle with parsley.
