Delicious and healthy Mediterranean chicken bowls with fresh ingredients and bold flavors.


Ingredients

  • 2 cups cooked quinoa
  • 1 pound chicken breast, grilled and sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine quinoa, chicken, cherry tomatoes, cucumber, olives, and feta cheese.
  2. In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Garnish with fresh parsley before serving.
