Ingredients

  • 1/4 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 pound assorted vegetables (e.g., bell peppers, zucchini, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, combine maple syrup, soy sauce, Dijon mustard, and garlic powder.
  3. Place salmon fillets in a baking dish and pour the maple glaze over them.
  4. In a separate bowl, toss the vegetables with olive oil, salt, and pepper.
  5. Spread the vegetables around the salmon in the baking dish.
  6. Bake for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
