Delicious low carb granola bars made with peanut butter and chocolate chips, perfect for a healthy snack!
Ingredients

- 1 cup natural peanut butter
- 1/2 cup sugar-free chocolate chips
- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup unsweetened shredded coconut
- 1/4 cup erythritol or preferred sweetener
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a mixing bowl, combine peanut butter, sweetener, vanilla extract, and salt. Mix until smooth.
- Add almond flour, coconut flour, and shredded coconut to the bowl. Stir until fully combined.
- Fold in chocolate chips and nuts if using.
- Spread the mixture evenly in the prepared baking dish and press down firmly.
- Bake for 15-20 minutes or until golden brown.
- Allow to cool completely before cutting into bars.
Notes
- Store in an airtight container for up to one week.
- For extra crunch, add more nuts or seeds.
