Description

Delicious low carb granola bars made with peanut butter and chocolate chips, perfect for a healthy snack!


Ingredients

  • 1 cup natural peanut butter
  • 1/2 cup sugar-free chocolate chips
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup erythritol or preferred sweetener
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a mixing bowl, combine peanut butter, sweetener, vanilla extract, and salt. Mix until smooth.
  3. Add almond flour, coconut flour, and shredded coconut to the bowl. Stir until fully combined.
  4. Fold in chocolate chips and nuts if using.
  5. Spread the mixture evenly in the prepared baking dish and press down firmly.
  6. Bake for 15-20 minutes or until golden brown.
  7. Allow to cool completely before cutting into bars.
