Description

Delicious and healthy Keto Zucchini Bars, perfect for a low-carb snack or dessert.


Ingredients

Scale
  • 2 cups grated zucchini
  • 1 cup almond flour
  • 1/2 cup erythritol
  • 1/4 cup coconut oil, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the grated zucchini with almond flour, erythritol, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the melted coconut oil, eggs, and vanilla extract.
  4. Combine both mixtures together until well blended.
  5. Pour the batter into a greased baking dish.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let cool before cutting into bars.
