Ingredients

- 2 cups grated zucchini
- 1 cup almond flour
- 1/2 cup erythritol
- 1/4 cup coconut oil, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the grated zucchini with almond flour, erythritol, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the melted coconut oil, eggs, and vanilla extract.
- Combine both mixtures together until well blended.
- Pour the batter into a greased baking dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before cutting into bars.
Notes
- For extra flavor, add walnuts or chocolate chips.
- Store in an airtight container in the fridge for up to a week.
