- 2 cups cooked sweet potatoes
- 1 cup almond flour
- 2 large eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the cooked sweet potatoes, almond flour, eggs, garlic powder, smoked paprika, salt, and black pepper.
- If using, fold in the shredded cheese.
- Mix until a dough forms, then scoop out tablespoon-sized portions and form into bites.
- Place the bites onto the prepared baking sheet, spacing them evenly apart.
- Bake for 20-25 minutes or until golden brown.
- Let cool slightly before serving.

- Store leftovers in an airtight container in the fridge for up to 3 days.
- These bites can be frozen for later use; just reheat in the oven.
