Ingredients

  • 2 cups cooked sweet potatoes
  • 1 cup almond flour
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cooked sweet potatoes, almond flour, eggs, garlic powder, smoked paprika, salt, and black pepper.
  3. If using, fold in the shredded cheese.
  4. Mix until a dough forms, then scoop out tablespoon-sized portions and form into bites.
  5. Place the bites onto the prepared baking sheet, spacing them evenly apart.
  6. Bake for 20-25 minutes or until golden brown.
  7. Let cool slightly before serving.
