Ingredients

  • 2 cups heavy cream
  • 1 cup unsweetened almond milk
  • 1 cup fresh strawberries, sliced
  • 1/2 cup keto-friendly sweetener
  • 1 tablespoon vanilla extract
  • 1 teaspoon gelatin
  • 8 ounces cream cheese
  • 1 teaspoon lemon juice

Instructions

  1. In a bowl, mix the heavy cream, almond milk, and sweetener until combined.
  2. In another bowl, blend cream cheese, vanilla extract, and lemon juice until smooth.
  3. In a saucepan, heat a small amount of the mixed cream, then dissolve the gelatin in it.
  4. Layer the ingredients in a baking dish: start with a layer of cream mixture, followed by a layer of cream cheese mixture and sliced strawberries.
  5. Repeat the layers until all ingredients are used.
  6. Chill in the refrigerator for at least 2 hours before serving.
