- 2 cups fresh strawberries, hulled and sliced
- 1 cup almond flour
- 1/2 cup erythritol or other keto-friendly sweetener
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the strawberries with erythritol and set aside.
- In another bowl, mix almond flour, baking powder, and salt.
- Add melted butter, eggs, and vanilla to the dry ingredients and mix until smooth.
- Spread the strawberry mixture in a baking dish and pour the batter on top.
- Bake for 30-35 minutes until the top is golden brown.
- Let cool before serving.

- Serve warm with whipped cream or sugar-free ice cream.
