Ingredients

- 2 cups cooked potato gems
- 1 cup shredded cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced olives
- 1/4 cup sour cream
- 1/4 cup chopped green onions
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 400°F (200°C).
- Spread the cooked potato gems on a baking sheet.
- Sprinkle the cheese over the potato gems.
- Add the diced tomatoes and sliced olives on top.
- Season with chili powder and garlic powder.
- Bake for 10-15 minutes, until the cheese is melted.
- Remove from the oven and top with sour cream and green onions.
- Serve hot and enjoy!
Notes
- For extra flavor, add jalapeños or your choice of protein.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
