Description

Delicious low-carb peach cobbler bars perfect for a keto diet.


Ingredients

Scale
  • 2 cups almond flour
  • 1/2 cup erythritol
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 cups fresh peaches, sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine almond flour, erythritol, baking powder, and salt.
  3. Add melted coconut oil, eggs, and vanilla extract to the dry ingredients and mix until well combined.
  4. Spread half of the batter in the prepared baking dish.
  5. In another bowl, toss peaches with lemon juice and cinnamon.
  6. Layer the peach mixture over the batter, then drop spoonfuls of the remaining batter on top.
  7. Bake for 30-35 minutes, or until golden brown.
  8. Allow to cool before slicing into bars.
