Delicious low-carb peach cobbler bars perfect for a keto diet.
Ingredients

- 2 cups almond flour
- 1/2 cup erythritol
- 1/4 cup melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 cups fresh peaches, sliced
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a mixing bowl, combine almond flour, erythritol, baking powder, and salt.
- Add melted coconut oil, eggs, and vanilla extract to the dry ingredients and mix until well combined.
- Spread half of the batter in the prepared baking dish.
- In another bowl, toss peaches with lemon juice and cinnamon.
- Layer the peach mixture over the batter, then drop spoonfuls of the remaining batter on top.
- Bake for 30-35 minutes, or until golden brown.
- Allow to cool before slicing into bars.
Notes
- Store leftovers in an airtight container in the refrigerator.
- These bars can be frozen for longer storage.
