- 4 large eggs
- 1 cup almond milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 2 tablespoons erythritol or preferred sweetener
- 1 tablespoon butter for cooking
- 1/4 cup sugar-free syrup (optional)
Instructions
- Preheat a skillet over medium heat and melt butter.
- In a bowl, whisk together eggs, almond milk, vanilla extract, cinnamon, and sweetener.
- Dip each croissant halves in the egg mixture until soaked.
- Cook croissants in skillet until browned on both sides.
- Serve warm with sugar-free syrup if desired.
Notes
- For extra flavor, add a pinch of nutmeg to the egg mixture.
