Ingredients

  • 2 eggs
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh herbs (like parsley or cilantro)

Instructions

  1. In a large bowl, combine the corn, eggs, almond flour, Parmesan cheese, baking powder, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Heat a skillet over medium heat and grease lightly.
  3. Drop the mixture by spoonfuls onto the skillet, flattening slightly.
  4. Cook for 3-4 minutes on each side, or until golden brown.
  5. For the whipped feta, blend feta cheese with olive oil until smooth.
  6. Serve the fritters warm, topped with the whipped feta and fresh herbs.
