Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onions, garlic, celery, and carrots; sauté until they are soft.
- Stir in the shredded chicken, chicken broth, thyme, salt, and pepper.
- Bring the soup to a simmer and cook for 20 minutes.
